Ingredients
- 200 g Oats (Uncooked jumbo oats)
- 1 Banana
- 2 tsp Cinnamon
- 1 tbsp Honey
- 100 g Blueberries
- 3 tbsp Almonds (flaked)
- 2 tbsp Pumpkin seeds
- 200 ml Milk (or almond milk)
- 1 tbsp Coconut oil
- ½ tsp Salt
- 1 tsp Vanilla extract
Instructions
- Lightly coat a baking dish with a little coconut oil.
- Place the oats in a bowl and mix with the milk.
- Place the mixed oats, berries and milk in the baking dish.
- Add honey, coconut oil, mix and sprinkle cinnamon on top.
- Chop the banana and spread it out on top.
- Place in the oven and bake for 20 minutes, then remove from the oven and add the flaked almonds and pumpkin seeds. Place back in the oven and bake for 5 more minutes or until the top of the bake turns brown.
- Serve warm with your choice of toppings.
