Chorizo and Veggie Egg Wraps

Equipment
- Large mixing bowl
- Non-stick pan
Ingredients
- 1 tbsp Olive oil
- 10 Mushrooms (chopped)
- 1 Red bell pepper (chopped)
- 1 Red onion (chopped)
- 10 Cherry tomatoes (quartered)
- 40 g Chorizo (chopped)
- 100 ml Milk
- 6 Eggs
- ½ tsp Paprika
- ½ tsp Cumin
- ½ tsp Garlic
- ½ tsp Black pepper
Servings
Instructions
- Heat ½ tbsp of olive oil on a non-stick pan.
- Add the mushrooms, bell pepper and onion. Cook on a medium heat for 5 minutes. Mixing often.
- Add the chorizo and cook for a further 5 minutes until the vegetables are soft and slightly browned. Remove from the pan and set aside.
- In a large bowl, beat the eggs, milk, paprika, cumin, garlic and black pepper.
- Add some oil to the pan and place it back over a medium heat.
- Pour quarter of the mixture onto the pan and cook for one minute until set. Flip and do the same on the other side.
- Transfer the egg wrap onto a plate and spoon a quarter of the filling into the wrap, and roll up.
- Do the same with the rest of the egg mix and fillings.
- Sprinkle over some cheese and serve.
