Sweet Potato Hash with Baked Eggs

Ingredients
- 2 Sweet potato
- 1 tbsp Coconut oil
- 1 Onion (thinly sliced)
- ¼ tsp Salt
- ¼ tsp Ground pepper
- 4 clove Garlic (chopped)
- 1 Red bell pepper (thinly sliced)
- 2 handful Baby spinach
- 100 g Cheddar cheese (grated)
- 3 Free-range egg
- ¼ tsp Cayenne pepper
- ¼ tsp Smoked paprika
Instructions
- Preheat the oven to 180°C.
- Chop the sweet potato into really small cubes.
- Meanwhile, heat the coconut oil over medium-low heat in a large non-stick pan. Add the onion, garlic, salt, then the sweet potato and cook until the sweet potatoes have softened, stirring often.
- Sprinkle the ingredients with the cayenne pepper and smoked paprika. Add the red pepper and cook over medium heat for about 2 minutes until tender. Add the spinach and cook until the spinach is wilted.
- Crack 3 eggs over the hash, scatter the cheese on top and then place the skillet or pan in the preheated oven at 180°C and bake for roughly 5-6 minutes.
