Suitable for vegans and vegetarians, lactose free or gluten free diets. Add some chocolate chips for a burst of chocolate with each bite. For a non-vegan recipe, swap the flax and water for 2 eggs, the soy protein to whey protein and the milk to cow's milk.

Ingredients
- 2 tbsp Milled flaxseed
- 150 ml Hot water
- 150 g Oats
- 1 tsp Baking powder
- 60 g Soy protein powder
- 3 tbsp Cacao powder
- 50 g Dark chocolate (diary free)
- 2 tbsp Coconut oil (solid)
- 100 ml Oat milk (non sweetened)
- 3 tbsp Maple syrup (or honey)
Servings
Instructions
- Preheat the oven to 190℃.
- Mix the flax and water and leave to sit for 5 minutes.
- Blitz the oats until flour like.
- Add the baking powder, soy protein and cacao powder and blitz for a minute.
- Transfer to a large bowl.
- Add in the flax and water and mix.
- Melt the dark chocolate and coconut oil in the microwave for 80-90 seconds until fully melted.
- Mix in the chocolate and coconut oil and gradually add in the milk and maple syrup.
- Mix well to bring the mixture together.
- Use your hands to finish combining the batter before forming cookies.
- Add chocolate chips at this stage if doing so.
- Place the cookies on a lined baking tray.
- Bake in the oven for 20 minutes, turning half way through.
- Leave to sit for 10-15 minutes before removing from the tray.
