  • Ice-cream maker or a sealable container

Ingredients

  • 500 ml Coconut milk
  • 1 Free-range egg (1 egg yolk)
  • 1 tsp Vanilla extract
  • ½ Vanilla pod (Seeds from ½ vanilla pod)
  • 2 tbsp Honey
  • 1 tbsp 85% dark chocolate (grated)

Instructions

  • Blend all the ingredients to a smooth consistency.
  • Transfer to an ice-cream maker or pour into a sealable container.
  • Place in the freezer to prevent ice crystals forming, stir thoroughly every 30 minutes for 2 hours or until frozen.
  • Serve with grated dark chocolate on top.
