500mlCoconut milk
1Free-range egg(1 egg yolk)
1tspVanilla extract
½Vanilla pod(Seeds from ½ vanilla pod)
2tbspHoney
1tbsp85% dark chocolate(grated)

Instructions
Blend all the ingredients to a smooth consistency.
Transfer to an ice-cream maker or pour into a sealable container.
Place in the freezer to prevent ice crystals forming, stir thoroughly every 30 minutes for 2 hours or until frozen.
Serve with grated dark chocolate on top.
